Award
winning Entropy Bar
opens new restaurant in Leicester city centre
Tom
Cockerill and Cassandra Soulsby,
owners of award-winning Entropy
Bar, have opened a new Entropy
Restaurant in Leicester city
centre. The stylish new urban restaurant
features Tom Cockerill’s modern European
cuisine marked by the use of local
quality produce and a skillful mix
of modern and traditional culinary
techniques. The result is cooking
that is both technically precise
yet unpretentious.
Tom
and Cassandra Cockerill joined forces
with their first venture Entropy
Bar which opened in March 2000. They
helped rejuvenate the Hinckley Road/Braunstone
Gate area by converting the old H
North butcher’s shop and neighbouring
Worthington’s grocery shop into the
award-winning bar. The new restaurant
follows in this tradition with the
regeneration of a property once used
as a joiner’s workshop – a concrete
construction warehouse built in the
1970’s. The powerful minimalist design
of the interior creates a refreshing
contrast to the gritty urban view
through the vast windows from the
top two floors of the restaurant.
Tom
Cockerill, the Executive Chef, has
developed the restaurant menu taking
strong influence from his work in
both France and England. Although
a Physics graduate, he decided his
vocation was really in the kitchen
while working in the restaurants
of the French Alps for two snowboarding
seasons. On returning to Britain,
he has spent much of the past 5 years
developing his culinary skills at
restaurants across the country including
Hambleton Hall in Rutland, The Opera
House in Leicester, The Vineyard
at Stockcross and more recently at
the three Michelin starred Fat Duck
in Bray.
Marc
Billings, Entropy Restaurant’s Head
Chef, complements Tom’s cooking with
food that is best described as modern
British. His career spans over a
decade and prior to working at Entropy
he was the Head Chef at Watson’s
in Leicester.
In
February 2003, Tom’s food at Entropy
Bar was awarded ‘Best Pub/Bar Meal’ at
the Leicestershire Tourism Awards
2002/2003 and in September 2003,
Entropy was a finalist at the ‘Best
Pub/Bar Meal’ Heart of England Food
and Drink Excellence Awards.
The
couple’s philosophy for both Entropy
Bar and Restaurant is based on a
wish to, “provide a high quality
experience of eating and drinking.
