Water House in Shoreditch, London’s most eco-friendly restaurant
This Monday, 11th February, saw the opening of London’s most eco-friendly restaurant, Water House in Shoreditch. Its executive chef is Arthur Potts Dawson, whose previous endeavours include working with Jamie Oliver at Fifteen, and establishing the highly praised Acorn House Restaurant.
If Acorn House was the prototype ‘green’ eaterie, then Water House is on course to be its proud scion. In addition to the organic, locally-sourced food, which is promoted as “well-balanced, simple and healthy”, the restaurant is to be powered as far as possible by hydro-electric and solar energy. Furthering its environmental credentials, the restaurant will bottle its own water, recycle all of its waste, and even strive for a paperless lavatory.
As if all that weren’t enough, Water House, like Acorn House, is owned by Shoreditch Trust, a charitable organisation which seeks to regenerate the local area. With the promise of urban renewal, then, alongside the environmental innovations and alluring recipes, Water House must be worth a visit – from curiosity, if nothing else.
