THE WALNUT TREE REOPENS FOR BUSINESS, writes Clifford Mould
The Walnut Tree, a much-loved restaurant just outside Abergavenny in South Wales, has re-opened (19 December) as a joint venture between William Griffiths, of The Angel Hotel in Abergavenny, and top chef Shaun Hill.
William Griffiths and Shaun Hill first worked together some years ago at Shaun’s restaurant, The Merchant House, in Ludlow which had a Michelin star, 4/5 in the Good Food Guide, 3 AA rosettes and was voted 14th best restaurant in the world by Restaurant magazine.
They are delighted to be in business together. ‘It’s a particularly exciting and fast-moving project,’ said William Griffiths.
‘In just six months we’ve developed our concept for The Walnut Tree, completely refurbished the property and pulled together a tremendous team,’ Williams Griffiths told Dine Online.
The Walnut Tree’s menu is an eclectic mix, based on personal taste and sound cooking techniques, rather than any particular country’s cuisine. A unifying feature is excellent ingredients, carefully chosen, and local where feasible. Following the straightforward style developed at The Merchant House, The Walnut Tree aims to be an informal setting for good food and wine.
The Walnut Tree is open from Tuesday to Saturday for lunch (12 noon – 2.30pm) and dinner (7pm – 10pm). Some of the tables are not bookable, to ensure that diners have the chance to eat at short notice.
