- Modern British - British chefs cooking in an eclectic style, redefining
both traditional British and foreign dishes with a creative and
imaginative flair.
- Traditional British - pies, roasts, puddings - wonderful when done
well!
- Anglo Mediterranean - British chefs inspired by Italian and other Southern
European traditions. Everything should be homemade.
- East meets West - e.g. Thai French: oriental spices and ingredients
presented in an integrated, modern style. Brings together ideas derived
from Nouvelle Cuisine and from Oriental Cuisine.
- Modern Italian - cooked by Italians, but no dangling Chianti bottles nor
endless lists of pasta dishes laced with all purpose sauces. Presentation
derived from Nouvelle Cuisine, helpings a darn sight more generous.
