{"id":254,"date":"2008-02-14T12:34:29","date_gmt":"2008-02-14T12:34:29","guid":{"rendered":"http:\/\/dine-online.co.uk\/foodie\/eben-freeman-cocktail-aficionado-at-the-exclusive-bacardi-house\/"},"modified":"2008-02-14T12:34:29","modified_gmt":"2008-02-14T12:34:29","slug":"eben-freeman-cocktail-aficionado-at-the-exclusive-bacardi-house","status":"publish","type":"post","link":"https:\/\/dine-online.co.uk\/foodie\/eben-freeman-cocktail-aficionado-at-the-exclusive-bacardi-house\/","title":{"rendered":"Eben Freeman, cocktail aficionado, at the exclusive Bacardi House"},"content":{"rendered":"<h2>The Perfect Mojito<\/h2>\n<p><em>Alistair Marsella sees Eben Freeman, cocktail aficionado, perform the exclusive Bacardi House<\/em><\/p>\n<p>As a lover of all things Latin and the pulsating Mambo beat, I couldn\u2019t resist an invitation to attend a very special event at the exclusive Bacardi House. <\/p>\n<p>This tastefully decorated building \u2013 at a secret London location \u2013 has a bar reminiscent of the most flamboyant Batista era, and is like being transported straight to the island, pre-revolution, when flamboyant excess was rife. <\/p>\n<p>To celebrate the anniversary of Don Facundo Bacardi Masso\u2019s first manufacture of rum, on 4th February 1862, I watched a demonstration of the perfect Mojito of the future. This was expertly prepared and mixed by the <strong>cocktail aficionado<\/strong>, New Yorker <strong>Eben Freeman<\/strong>. Eben, having first donned gloves and protective goggles, uses liquid nitrogen, which produces a Frankenstein-like mist pouring over the bowl. Expertly, and with the aid of the nitrogen, tiny balls of mint and lime are produced, and then added into the rum.
