{"id":161,"date":"2007-11-27T08:52:02","date_gmt":"2007-11-27T08:52:02","guid":{"rendered":"http:\/\/dine-online.co.uk\/foodie\/coarse-liver-pate-recipe\/"},"modified":"2016-10-07T16:41:41","modified_gmt":"2016-10-07T16:41:41","slug":"coarse-liver-pate-recipe","status":"publish","type":"post","link":"https:\/\/dine-online.co.uk\/foodie\/coarse-liver-pate-recipe\/","title":{"rendered":"Coarse Liver Pate Recipe"},"content":{"rendered":"<p>Serves 6-8<\/p>\n<p>Preparation time: 30 minutes<\/p>\n<h1 style=\"text-align: center;\"><strong>Recipe &#8211; Coarse Liver P\u00e2t\u00e9<\/strong><\/h1>\n<p style=\"text-align: left;\"><em><br \/>\nCooking time: Under 10 minutes<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>375g\/12oz ox liver, trimmed<\/p>\n<p>225g\/8oz pancetta cubes or finely chopped streaky bacon<\/p>\n<p>2 shallots, peeled and finely chopped<\/p>\n<p>1 garlic clove, peeled and finely chopped<\/p>\n<p>15ml\/1tbsp freshly chopped thyme<\/p>\n<p>15ml\/1tbsp freshly chopped flat-leaf parsley<\/p>\n<p>2.5ml\/\u00bd level tsp cayenne pepper<\/p>\n<p>Salt and freshly milled black pepper<\/p>\n<p>15-30ml\/1-2tbsp Cognac or brandy<\/p>\n<p>25g\/1oz melted butter, optional<\/p>\n<p>To serve:<\/p>\n<p>Crusty bread or Melba toast<\/p>\n<p>To garnish:<\/p>\n<p>Fresh bay leaves and redcurrants, optional<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1. Heat a large non-stick pan and cook the pancetta or bacon for 4-5 minutes until golden brown.<\/p>\n<p>2. Add the liver, onion, garlic, herbs, seasoning and Cognac or brandy. Cook for 1-2 minutes until the liver is brown, but still slightly pink in the middle. Cool slightly.<\/p>\n<p>3. Transfer the mixture to a blender or food processor and coarsely blend with the melted butter (if used).<\/p>\n<p>4. Cool for 20-30 minutes, then spoon into 4 x150ml\/\u00bcpint small ramekin dishes.<\/p>\n<p>5.
