Stuffed Braised Lamb’s Heart
Serves 4-6
Preparation time: 35 minutes
Cooking time: Under 2 hours
Ingredients:
4 prepared lamb’s hearts
8 streaky bacon rashers
For the onion and mushroom stuffing:
40g/1½oz butter
1 small onion, peeled and chopped
50g/2oz mushrooms, chopped
75g/3oz sausagemeat
15ml/1tbsp freshly chopped flat-leaf parsley
15ml/1tbsp freshly chopped tarragon
Salt and freshly milled black pepper
2.5ml/½tsp ground mace
