Local Highland produce is the
cornerstone of Steven Anderson's
new restaurant
Visitors and residents
to Boat of Garten nestling In the
heart of the glorious setting of
the Cairngorm National Park in
the Highlands will soon be finding
themselves tempted by the aroma
of freshly baked bread, enticed
by a first class menu and lured
by the stylishly rustic charm of
Anderson's Restaurant when the
much anticipated venture finally
opens on Friday, 29th June.
For over 5 months, owners Steven
Anderson and Claire Fincham have
worked day and night to transform
a run down fishing tackle shop
into a welcoming yet chic space
where guests will be able to relax
and enjoy a seasonal menu filled
with a range of delicious and locally
sourced produce.
For six days a week (seven days
during July and August), the restaurant
will be open from 11am, serving
home-made cakes and pastries with
a range of freshly brewed coffees,
light lunches from 12pm-2:30pm
and an a la carte dinner menu from
6pm until 9:30pm.
The menu, which changes every
month, will provide guests with
clear, fresh, innovative, big flavoured
and big portioned dishes ensuring
they will return time and again.
The July menu alone includes marinated
wild rabbit skewers on rocket leaves
with rhubarb relish; locally made
venison sausages on wholegrain
mustard mash with caramelised onion
and port wine gravy; and light
and zesty lemon and poppyseed cheesecake.
Head chef and co-owner, Steven
Anderson, told Dine-Online: "the
ingredients I use have to be of
the highest quality and you really
can't beat Scotland when it comes
to some of the best produce in
the world. Being in the heart of
the Highlands means we are at the
centre of what is effectively one
big larder! All our food is fresh,
local and seasonal and we'll be
using as much of what is produced
on our doorstep as we can to create
the finest dishes we can."
Right from the start,
Claire and Steven had a clear vision,
not
only of the food they wanted to
cook and serve, but also the environment
they wanted to create. Open view
kitchens have finally reached Scotland
as Claire explains: "The
open view to the kitchen was one
of
the most important factors when
designing the restaurant. We didn't
want the diners to just order their
food, forget about it, and then
have it presented to them, instead
we wanted them to feel part of
the whole process. The dining area
provides a relaxed and atmospheric
space where you can watch local
life pass by, while at the same
time enjoying being part of the
exciting and busy kitchen." Volunteers
for washing up are always welcome.
Anderson's Restaurant will open
at 6pm on Friday 29th June and
will be open from 11am on Saturday
